WHAT YOUTH EATS: AGUACHILE Another Raw One: Sinaloa Spicy Shrimp

Photos: Paul Brewer

If you’ve been following along, you know that we’ve gone raw at WhatYouth.com for the last few weeks. We’ve played with raw tuna a couple different ways (here and here), and got fancy and fresh with a raw beef tartare last week. It’s been fun, delicious, and the whole experiment has opened up our late afternoon possibilities — less time cooking, more time on the run having fun until the sun sets.

This week we look south of the border for ceviche’s spicy and mysterious cousin, aguachile. Unlike ceviche that gets “cooked” in an acid marinade (lime, etc), aguachile is raw shrimp that gets a quick bath in lime, chiles, and herbs before hitting your hungry mouth.

Like 5 minutes, then it’s done So, it’s mainly spicy raw shrimp. And raw shrimp sounds scary. Well, it should.

Take it from Serious Eats, my bible when I want to geek out on the why of food-related things: “Because seafood lives in, well, the sea, the bacteria and enzymes naturally presented in it are used to operating at much much colder temperatures than those in, say, a cow. Because of this, even at regular fridge temperatures, they multiply much faster than bacteria from land-dwelling animals, which is what causes seafood to spoil so much faster than its terrestrial counterparts.”

So the lesson? Get fresh fish. Find some shrimp that hasn’t been frozen, isn’t grey, doesn’t stink, and hasn’t been injected with gel in Asia (seriously). If you can’t swing that, there’s no reason you can’t use fresh scallops, or really fresh fish of any sorts (salmon, tuna, bass, etc).

And listen, I love ceviche. But I like aguachile for its extra spiciness and extra quickness. Plus, ceviche isn’t technically raw, so it doesn’t fit into this whole raw thing we’ve been doing at What Youth. Here’s how you do a classic aguachile, but you can get creative. Freestyle! You can do different fish, or sub in orange for lime, or add crunchy things like jicama or cucumbers, other herbs like basil or mint, or try different chilies. Mix it up. —Paul Brewer

INGREDIENTS:

  • Fresh shrimp
  • Serrano Chiles
  • Onion, chopped
  • Cilantro, chopped
  • Cucumber, chopped
  • Lime juice
  • Salt and Pepper
  • Chips, to serve with

CLEAN THE SHRIMP

Remove the heads, split the bodies in half lengthwise, and remove the veins. Then, chop the clean shrimp. I like sort of bigger chunks. (Bonus points for you if you save the heads—fry them for a crunchy snack, or use them to make a quick stock.)

MAKE THE CHILE MIXTURE

With a mortar and pestle (which you have already), smash the serrano chilies. As they break down, add a little water to loosen. Then add in lime juice, onion, cilantro, and cucumber. Season with pepper and salt until you’re happy. Let that shrimp bathe for 5 minutes and taste again.

SERVE

Toss the shrimp with the chili mixture and serve with some of those big crispy tortilla chips from the Meximart. Or saltines even. It’ll be spicy, so make sure you have some Modelos nearby to sooth that hotness.

The WY Guide: The South West of France Your escape for autumn includes fine wine, women and beachbreaks

Everyone knows the second the U.S. Open of Surfing ends, summer might as well be over and done with. You might get a few hot beach days out of it, but it’s time to start planning your next move. August is weird. It’s hot. And sticky. And crowded. And aside from maybe Japan and Tahiti…

The WY Guide: Newport Beach, CA A coastal circus we somehow love

Newport Beach is an odd place. It’s our backyard. We love it. We hate it. It is a juxtaposition of some of the world’s worst culture next to some pretty awesome people and places. And the waves can be as fun as anywhere on earth. It’s a place where the iconic Frog House surf shop exists…

Eating and Drinking in Barcelona A Radical Class note pad from the Med

I was sitting in traffic the other day after a long day at work and got a whiff of someone’s cigarette in a passing car. The smoke took me back to a far away place. A place where you can float in the Mediterranean Sea, where everyone is a wacky strange beautiful. Where the speed…

5 Books to Fuel Your Existential Crisis Don’t have an existential crisis? Get one this weekend

You don’t have to read. Your life is your blank page, scribble as you like. But in our experience, it’s still the best way to begin understanding the complicated, ever-curious thoughts that come into our own minds. To learn that living is living and we’re all going to die. And we don’t mean that to…

3 Cocktails for Summer What Youth Drinks for a Crowd

When it comes to summer, for me, it doesn’t get much better than a long day at the beach — some waves, some beers, some babes, sun, sand. You all know that and I’m sure do it very well. That’s cake. The icing on the cake is then, instead of everyone going home come sunset,…

The WY Guide: New Zealand Coffee, wine, waves and music

New Zealand sits next to Australia on a map, but often below it on bucket lists. A long flight to go for somewhere not Australia. But that’s what makes it such a jewel. It’s the underground choice. Welp, you know what time it is: “Time to fuck the WSL!” No, we kid, calm down. But for reals, lots of our friends and enemies will have their eyes on Snapper and the Gold Coast the next few days, and since we enjoy a little shindig as much as the next guy, we thought we’d give…

Quiksilver used to have a slogan that said: “If you can’t rock and roll, don’t fucking come.” It was fun, punk and had some damn moxie. I’d wear that! But then Quiksilver became cautious and scared and you didn’t hear much from them unless you looked at the back of your dad’s t-shirt. This is…
